Sheppards Pie with Cheesy Mashed Potatoes 8 med. potatoes 3 tbsp butter salt and pepper to taste 2 large onions chopped 2 lbs ground beef 1 cup milk 2 tsp worchestershire sause 1/4 tsp tobasco 1/2 cup frozen corn 1/2 cup frozen peas 1 3/4 c. milk 1 cup grated cheddar cheese 2 tbsp vegetable oil 2 cloves garlic chopped 2 tbsp flour 1-19oz can crushed tomatoes 1/2 tsp thyme 3/4 cup bread crumbs 1 tsp paprika 1. Cook and mash potatoes (I usually use my electric mixer) with 3/4 cup of milk, butter, cheese, salt and pepper. 2. Heat oil in a pan. Cook onions and garlic until slightly browned. Add beef and cook until done. Stir in flour. Add remaining milk (1 cup) and bring to a boil for 4-5 minutes. 3. Add tomatoes and cook until thick. Stir in spices, bread crumbs, veggies, salt and pepper. 4. Put mixture into casserold dish. Spread potatoes on top. Sprinkle with paprika. Bake at 400 degrees for 30 minutes. I usually double the spices and veggies!!!
